6. Texture, Colour & Consistency (of Pure cow ghee)

These are the three leading parameters through which you can examine the credibility of any a2 cow ghee. A pure desi cow ghee has -clearly visible, well-formed granules- spreading evenly all over the entire mass. If you suspect that your a2 cow ghee doesn’t hold a good granular structure then it may not be the right one.

Now, another factor is- Color, the color of a2 cow ghee appears a little more yellowish or golden in nature because of the presence of a compound called beta-carotene. This substance is gets converted to Vitamin-A by our body and supports the immune system.

Cow’s diet has been shown a major influence over beta-carotene. And Dairy research indicates that cows who are fed grass offer the best quality milk and hence Grass-fed ghee contains a better amount of beta-carotene compared to regular ghee.

Further, you may find some desi cow ghee be solid in nature, some slightly viscous, and some more or less in between – and that’s totally fine. The consistency of desi ghee or even any ghee mainly relies on the ambient temperature at which it is stored. So it’s perfectly normal for ghee to be solid, liquid, or a combination of these.

7. Packaging

Effective packaging is very necessary in order to maintain consistent quality and prevention of the product from deterioration over time. Therefore, if possible, you should avoid Ghee that comes in plastic packaging. Not only do plastic pouches creates storage hassles but it also hinders the properties of the content inside it; as there is an obvious chance of leaching with plastic storage containers. For that reason, glass jars are considered the most preferable storage containers to store ghee as they do not affect or alter the nature of ghee in any sense.
